Chef Will Cowling
"Previous to starting at West 10, at the end of 2017, I’d spent 5 years in London working in kitchens down there. I worked with some really great chefs along the way, who taught me a lot. Most notably Simon Rogan at Gordon Ramsays old Claridges site and for Michel Roux Junior at Parliament Square.
I really love the creative side of cooking, turning really humble ingredients into a finished dish.
Going back to when I was a teenager, I started washing dishes at Baldwins Omega in Sheffield, whilst still in school. I was in awe of the chefs who worked there and the environment in which they worked. Eventually I was encouraged to follow a career in the kitchen. I spent 3 years working and studying at Birmingham College of Food to get my qualifications, this set me up for a move to the Big Smoke.
Here at West 10 we combine seasonal ingredients with modern techniques to deliver food which is simple, yet elegant. Everything is bought and prepared fresh on site. We have some fantastic suppliers who we work closely with., which helps with our menu planning.
Chris Beech, our butcher works with Whirlow Farm and Christian Szurko of JH Mann fishmongers, supply us with only the best meat and fish available. We try as much as possible to only use ingredients from the surrounding area of Sheffield, reducing air miles and creating a greener footprint on the environment.
Pop in to try our weekly changing menu and a glass of wine!"
